Mornings are extremely hectic. Three kids to get ready, a dog to walk and cat to feed, it can feel a little overwhelming. Throw in breakfast and I’m lucky we get out the door on time! When I have a busy day ahead, I want something hardy and filling for breakfast, but it has to be convenient and healthy too! My favourite breakfast dish is oatmeal, but since being diagnosed with celiac disease, its hard to find a great tasting oatmeal that is gluten free. Finally, I came across morning rush solution; Rocket Foods.

I was so excited about these flavours that I began dreaming about them way beyond breakfast time. I decided they would make an amazing snack on the go, so I decided to play around with some ingredients in my kitchen and create a delicious granola bar out of these oats.
Granny’s Apple Pie Oatmeal Bars
- 2 1/2 Cups of Granny’s Apple Pie oats
- 1/2 cup shredded coconut
- 1/3 cup honey
- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 1/2 cup of golden raisins
- 1 tsp vanilla
- 1/4 tsp of salt
Step 1: Toast the oats. On a cookie sheet covered in parchment paper, spread out the oats. Place oven at 350 F for 10 minutes turning once.
Step 2: While oats are toasting, line a 8×8 pan with parchment paper and spray with cooking spray. Set aside.
Step 3: In a small sauce pan, combine butter, honey, brown sugar, vanilla and salt. Cook over medium heat until butter is melted and sugar is dissolved.
Step 4: In a large bowl, combine butter mixture, toasted oats, and shredded coconut.
Step 5: Pour mixture in 8×8 pan. In order for the oats to stick together, press down firmly.
Step 6: Place in fridge for 2 hours allowing bars to set.
Step 7: Remove from fridge and cut bars into desired length
These are the perfect snack for school because they are healthy and allergen free!
