TGIF! Why does it feel like short weeks are longer than a regular week? Maybe it is because I spend all week trying to figure out what day it is! Its been a while since I posted a recipe for FOOD FRIDAY and I miss it! I have tried and tasted so many amazing recipes lately, but haven’t made the time to post them! This is changing!! Welcome back to Food Friday
This weeks recipe was a find by my husband. It was looking his feed on Facebook and came across a How to Video for Apple Crumble Cheesecake. Knowing that cheesecake is one of my favourite desserts and we had a ton of apples hanging around after our picking adventure, it was the perfect recipe to try. Of course, being gluten free, DH had to adapt the recipe a bit to ensure it was safe for me. It was so delicious that after we tried a it for our Sunday dinner, we recreated and shared it with our extended family for Thanksgiving.
Apple Crumble Cheesecake
2 cups of Gluten Free all purpose flour (I used Presidents Choice for this recipe!)
1/2 cup of brown sugar, firmly packed
1/2 tsp cinnamon
a pinch of salt
1 cup of unsalted butter
3 8oz blocks of cream cheese
3/4 cup + 2Tbsp of sugar, divided
3 large eggs
1 tsp of vanilla
pinch of salt
4 apples peeled, cored and diced. The original recipe called for Granny Smith, we used Red Delicious and Gala because that is what we had on hand.
1/2 tsp of cinnamon
3.4 cup of brown sugar
1/4 cup sugar
1/2 cup gluten free flour
1/2 cup of gluten free old fashion oats
1/2 cup of butter, softened
1/2 tsp of cinnamon
caramel sauce for drizzling
Step 1: Preheat oven to 350 F and line a 9×13 pan with parchment paper
Step 2: Make crust: Mix flour, brown sugar, cinnamon and salt until well combined. Add softened butter and mix with your hands until its crumbly and moist. Press into pan and form crust.
Step 3: Make Filling: Beat cream cheese and 3/4 cup sugar in a large bowl until fluffy. Add eggs, vanilla and salt. Mix until well combined. Pour over crust.
Step 4: In a small bowl, mix apples, sugar and cinnamon. Set aside.
Step 5: Make crumble: In a medium bowl, mix brown sugar, flour, and oats. Cut in butter until mixed.
Step 6: Mix apples and crumble mix together and place on top.
Step 7: Bake for 55 minutes. Let cool then refrigerate for 2 hours.
Step 8: Before serving, drizzle with caramel sauce
