January is in full swing and that means homework, after school programs and the craziness of life has resumed. Every morning, I wake up with the intention to have a health, stress free meal in front of my kids at dinner. Sadly, 5 o’clock approaches and I’m scrambling to throw ingredients together before a chorus of “I’m Hungry!” rings in my ears. Some nights, I have extra time to make an elaborate meal, whereas other nights I am left with less than an hour. It is those nights that I really feel the stress.
Over coffee with a friend, we began chatting about the meals our kids would and wouldn’t eat. It was interesting to hear the different meals that are ‘constants’ in her house and how they differed from my own. When she told me about her HOBO dinner, I was excited! It was a quick and easy meal, that my kids would love! Best of all, it involved very little clean up and was perfect for cold, busy winter nights!
Mexican Tinfoil Meal
4 White Potatoes
3 Bell Peppers
1 tsp of Gluten Free taco seasoning
4 Chicken Breasts
1 Cup of shredded Cheddar cheese
1/2 Cup of Salsa]
salt and pepper
1.. Preheat the oven to 350 F.
2.. Lay out 4 pieces of tinfoil on a cookie sheet.
3.. Chop up the peppers, potatoes and onions in to strips and evenly distribute them on the tin foil sheets.
4.. Season with salt, pepper and half the taco seasoning.
5.. Place full Chicken breast on top of the potato, pepper, and onion mixture.
6.. Top with salsa and cheese.
7.. Fold up up the 3 sides to create a pouch and place in oven. Cook in oven for 20 minutes.
8.. Unfold and serve!
