Normally, when it comes to dinner, I’m a last minute planner. Today, however, I was dreaming of a mixture of ingredients and I couldn’t wait to try it out. One of my favourite things about summer is the availability of fresh fruit. I’ve been on a peach kick lately. When you normally think about peaches, you think about desserts, but this time I was craving something savour. I spent all day dreaming up ideas how I could pair peaches with savor meals and came up with this delicious chicken dinner!
3 Peaches, thinly sliced
4 Chicken breast (cut into strips)
2 tbsp oil
1/2 cup chicken broth
1/4 cup of orange juice
1/4 cup of soy sauce
2 tbsp of brown sugar
1 tsp garlic
1 tsp ginger
1/2 tsp salt
1/2 tsp pepper
3 cups of brown rice (Cook as per directions on box)
Step 1: Heat oil in a frying pan on medium heat and add chicken strips. Cook until brown on both sides. Sprinkle with salt and pepper.
Step 2: Mix orange juice, brown sugar and soy sauce in bowl. Set aside.
Step 3: Add garlic and ginger to chicken and cook on high for 2 minutes
Step 4: Add chicken broth and bring to a boil.
Step 5: Add peaches, orange juice mixture and cook for 5 minutes.
Step 6: Reduce the temperature to medium and simmer for 5 minutes.
Step 7: Serve on a bed of rice and enjoy!
