Summer is coming to an end. The days of carefree, fun in the sun are soon to be replaced by routines, structure and of course back to school. As I struggle to hang on to those last remaining glimmers of summer fun, I like to surround myself with food and treats that are inspired by those elements. I had a BBQ to attend a few weeks back and I was in charge of desserts. Being Gluten free, I’m happy to oblige (because I know I can eat my cake and enjoy it too!). I wanted something new and delicious, it had to be light and summery and something that was easy for people to eat on paper plates with children running wild below! When I came across this recipe, I knew it was the perfect BBQ dessert recipe to celebrate all that summer has to offer!
This bar is mouth watering! From the infusion of the coconut from crust to dusting and the bitter, tang of the lemon makes for a delightful treat. It reminds me a lot of a lemon meringue pie, without the meringue. From the minute it hits your tongue, it feels like summer has exploded in your mouth.
