Just because its smoking hot outside, doesn’t mean I avoid baking in the kitchen. With BBQs, birthday parties, pool parties and picnics there is always an opportunity to whip up a tasty delight! Instead of turning the oven on and increasing the house’s overall temperature, I like to cool things down with a no bake Frozen pie instead.
Frozen pies combine the best of both worlds — They have a satisfying buttery crust that fills your belly and a delicious fruity pie fillings that will help keep you cool in the hot summer sun! Not only are they delicious and refreshing, but they can be made ahead of time, stored in the freezer (away from prying eyes) and pulled out at the perfect time to surprise guests with a unique dessert.
A few weeks ago, my inlaws hosted our annual summer birthday BBQ. The entire family gathered together to celebrate all of the family birthdays held in the summer months. Knowing there weren’t going to be many gluten free options (because I’m the only one gluten free), I decided to make and take a gluten free pie myself. I remember when I was little my mom would always make these delicious dream pies around my birthday. They were light, fluffy and had a graham cracker base. As I began to search for a similar recipe online, I came across this recipe and had to recreate this Frozen Strawberry Lemonade Pie!

Gluten free pie crusts are hard to come by and if you do find them they cost an arm and a leg and tend to be brittle and tasteless. When I need a taste quick pie crust I use Glutino’s all new Animal Graham Crackers.
