When the weather turns hot and sticky outside, the types and flavours of foods that we reach for changes. In the winter, we look for warm, gut filling foods like Stews, lentils and pasta, after braving the elements or shoveling the driveway. Summer days are more laid back and lazy, so meals tend to be lighter and thrown together with the fresh fruits and vegetables available. With BBQ invitations, trips to the cottage and dining al fresco on a patio, finding new and interesting meals can be a challenge.
One of my new favourite summer meals is Broccoli slaw. I found this delicious salad by mistake! My friend had provided me with a delicious cold slaw dressing that I was dying to try. I was in a rush at the grocery store and grabbed (what I thought!) was pre-shredded cabbage off the shelf. When I got home, I realized it was actually broccoli slaw. I added my friend’s cold slaw dressing recipe and found it to be a delicious salad! After a bit of research, I learned how easy it was to make broccoli slaw from scratch and I have been eating a lot of it lately! Next time you are invited to a BBQ consider taking this interest, yet delicious alternative to cold slaw!
