A gluten free diet can be very challenging at time. Reading labels, avoiding your favourite brands and missing out on foods at parties and restaurants can be upsetting. When I was first diagnosed with celiac disease, I was hopeful that the transition from a gluten diet to a gluten free one would be a simple as switching the brands I normally bought. I can clearly remember the first time I bit into my first gluten free sandwich. The bread was white, spongy and looked just like normal. What I didn’t realize was how different it would taste. When you are the one with a food intolerance, it is easy to adapt to new tastes and texture (the same way a diabetic would adapt to artificial sugars and sweeteners). When the rest of the family is able to eat normal foods, its harder to convince them to change.
One item, I haven’t been able to accept on my gluten free diet is homemade chocolate chip cookies. There is nothing more comforting then biting in to a freshly baked chocolate cookie. No matter what recipe I try, or what flour I have tried, the cookies always seem to taste off. This past weekend, DH was dying for a homemade cookie. He was going to bake normal cookies, but I begged him to make gluten free ones. I had recently received a box of Glutino All purpose flour, so we thought we give it a try. It was a success! Even DH, who often avoids gluten free foods because of the flavour, commented that they were really good. When I shared them with friends, they were shocked to find out they were gluten free!
