I have been officially living a #glutenfree lifestyle for 4 years. What started off as an unbearable task, has now become an everyday compromise. With the continual outpouring of new gluten free products on the market and more awareness in the media, living a gluten free lifestyle has become easier and easier. That being said, there are still some foods and restaurants that I truly miss since going gluten free. One of them is KFC. When the weather starts warming up, I start reminiscing about the good ol’ days where family get together met spending time outdoors sharing a bucket of KFC.
Since that delicious, crispy coating is made with flour, I have avoided it for years. One of best friends, heard me complain for the hundredth time and mentioned she had seen a recipe on Facebook for how to make KFC chicken at home. Loving the challenge of taking a gluten recipe and making it gluten free, I seized the day and created this delicious masterpiece. It is quick, easy and tastes just as good as what I remember!
1. Cut chicken into desired thickness.
2. Mix Spices together, then combine with flour.
3. Wash chicken in egg wash.
4. Place washed chicken in bag with flour spice mixture and SHAKE!
5. Deep fry for 8-10 minutes, drain and ENJOY!
