As March Break rolls around, my taste buds begin to dream of maple syrup. Being Canadian, the warm days of spring coupled by the crisp, cool nights signal the start of the maple syrup production season. During those cold nights, water is absorbed from the soil into the maple tree. When day breaks and the temperature warms up, a pressure begins to build in the tree that pushes the water to the bottom of the tree. The result of this constant pressure is sap. When the sap is collected and put through a vigorous evaporation process, maple syrup is created. It is estimated that Canada alone produces 71% of the worlds pure maple syrup with 91% of that syrup produced in Quebec (Pure Canada Maple).
To celebrate Maple Syrup season, I decided to test out Glutino’s Favourite sandwich bread and make a delicious maple treat! I have never made bread before and I was very excited to use our bread maker for the first time. With a few simple additions, I created a moist, delicious treat for my family.
Gluten Free Maple Cranberry Bread
4 Tbsp of melted butter
1 3/4 Cups of lukewarm milk
2 eggs slightly beaten
4 Tbsp of maple syrup
2 Tbsp of brown sugar
1 Pkg of Glutino’s Favourite sandwich bread mix
1 pkg of yeast
2/3 cups of dried cranberries
1/2 Cup of icing sugar
2 Tbsp of water
2 Tbsp of Maple syrup
Step 1: Pour the first 7 ingredients in as listed above into the bread maker. (VERY IMPORTANT!! Yeast can not touch wet ingredients!)
Step 2: Set the bread maker to sweet bread and normal crust.
Step 3: When “add ingredient” buzzer sounds, add cranberries.
Step 4: When the bread is complete, cool on a wire rack
Step 5: Mix icing sugar with water and make a paste. Drizzle on top of bread.
Step 6: Add Maple Syrup
Step 7: Slice and serve!! Maple butter makes a delicious topping!
