One of things I hate most about Celiac disease is the inability to try new dishes. My sister’s boyfriend introduced her to a French dessert called sugar pie. Sugar pie is a single-crust pie filled with a mixture of flour, butter, salt, vanilla, and cream, with brown sugar. It was originally created to be used during the winter months or maple syrup tapping, when fresh fruit wasn’t available for pie fillings. When baked, the brown sugar bubbles and bakes it create a sweet, magical caramel-like dessert. I smelt the sweet rich aroma, I admired the brown, sugary texture and I watched as family members indulged in it this truly mouth watering dessert. Being a sugar-aholic, I was dying to try this dish, but thanks to the flaky, flour crust, I wasn’t able to. Every time I visited my sister, this pie would make an appearance and every time I’d curse celiac disease for not allowing me to try it!
A fellow blogger, The Flying Couponer, posted a recipe to Traditional Sugar Tartlets that her grandmother use to make and I realized this was the recipe for the sugar pie I had been trying to recreate! With the help of Pillsbury Gluten free crusts and a few additional adaptations, I’m happy to say I LOVE the taste of sugar pie!
1/2 container Pillsbury Gluten free pie dough
2 Cups of brown sugar
2 Tbsp of gluten free flour
1 Tbsp vanilla
1 Tbsp melted butter
1 Cup of milk (or Cream)
optional 1/3 cup of dark maple syrup (I omitted in the recipe)
Step 1: Preheat the oven to 400 F
Step 2: Kneed half a container of Pillsbury Gluten free pie dough until warm, then flatten between two pieces of parchment paper. Using a rolling pin, flatten dough until it is 1 cm thick.
Step 3: Remove one layer of parchment paper and center the pie pan, flip the pie over and remove the other piece of parchment paper. Smooth dough into pie pan. Using a fork, trim the outside edges and bevel the crust edge. Set aside.
Step 4: In a bowl, mix brown sugar, flour, butter, eggs, vanilla, (maple syrup) and milk. Mix well.
Step 5: Pour into pie crust and put in the oven. Let bake for 20 minutes or until the center is firm.
Step 6: Remove from oven and let sit at room temperature for 2 hours.
