One of my favourite things about the holiday season is the baking! Unfortunately, Celiac Disease has really put a damper on this aspect. No longer can I join in cookie exchanges or indulge in fresh baking at a friends Christmas party. Instead of sitting around and pouting about my loss (or heaven forbid, go without!), I decided to explore the world of gluten free baking and create some new holiday favourites.

Glutino to the rescue! Sugar cookies Mix
A Sugar Cookie Mix? Could it possibly be as good as the Made-from-Scratch kind? I put it to the test! Simply mix the sugar cookie mix, butter, vanilla and eggs together and pop in the oven. I was worried after mixing all the ingredients together that maybe my dough was too wet. It was sticky and moist, not like any other sugar mix I had used before. I plopped 1 inch balls onto my cookie sheet and placed it the oven. The cookies doubled in size and came out a nice toasty brown colour. Not only did they look mouth watering, but they tasted light and buttery, the perfect combination for a classic Christmas Sugar Cookie. With a recipe this simple to use and this tasty, I may never make homemade sugar cookies again!
|Food Friday ~ Glutino Sugar Cookies|
- 1 box of Glution Gluten Free Pantry Sugar Cookie Mix
- 6 Tbsp of softened butter
- 2 large eggs
- 1 tsp of gluten free vanilla extract
- Optional: Sprinkles
- Optional: A few drops of food colouring
- Optional: 2Tbsp of sugar and 1 Tbsp cinnamon to coat cookies
- Preheat oven to 350
- Beat butter until fluffy
- Add Glutino Sugar Cookie Mix and mix until well combined
- Add eggs, vanilla, and food colour (optional) and mix thoroughly
- Scoop 1 inch blobs on a cookie sheet
- Add sprinkles (optional) or Sugar and Cinnamon mixture (optional)
A little piece of Heaven: Peppermint Yogurt Covered Pretzels
When this product arrived from Glutino, it was love at first site! How could I resist dreamy yogurt with a hint of candy cane mint? The smooth velvety yogurt melted in your mouth, the pretzel provide the hint of salt and a satisfying crunch, and the mint elicited the familiar feelings of Christmas. The combination was to die for! This is one holiday treat that will accompany to every holiday function this season!
