One of my favourite parts of the Christmas season is the baking! I love the smell of warm cookies and cakes rising in the oven, the hint of cinnamon that lingers in the air and of course devouring every single cookie in sight! At Christmas time, my inner baker begins to shine! I find myself spending hours upon hours in the kitchen creating new and interesting cookies. My back may ache, my feet may hurt, but the smiles that it brings to friends and family, especially my children, is worth every moment!
One of my fondest memories growing up would be my Mom at Christmas time. My mom is a holiday baker. She bakes for birthdays and special occasions, but at Christmas time watch out! Armed with her list of the ‘must have’ Christmas cookies and all the required ingredients, she would barricade herself in the kitchen and create an array of delicious Christmas treats. In my mind, her specialty was her shortbread. It was a simple recipe, but they would melt in you mouth! I would remember her mixing the batter and rolling them up in wax paper, then placing them in the freezer for 48 hours. The suspense of waiting for the cookies to freeze was killer, but I guess in the end it was all worth the wait!
This year I attempted to recreate my Mom’s famous Shortbread recipe (in a gluten free format) for my kids! I’m happy to report that my mom’s Christmas baking magic rubbed off!
Mom’s Gluten Free Shortbread Cookies |

- 1 cup of softened Gay Lea butter
- 1¾ cups Gluten Free all purpose flour
- ½ cup fruit sugar
- Cream butter until smooth
- Add flour and sugar to butter and cream until well mixed
- Roll into logs on wax paper and freeze for 48 hours
- Chop cookies into ¼ inch slices and arrange on cookie sheet
- Bake at 400 degrees for 10 mins

Shortbread can be a tricky thing to make, that’s for sure. I tend to cheat with it and get Walker’s when I really want some. I tried to make it once and it was a disaster.
