Did you know that vegetables and fruit make up the largest arc of Canada’s Food Guide rainbow? It is recommended that a healthy diet consists of 4-7 vegetables and fruit a day! It may seem like a lot, but if you eat a fruit and vegetable at every meal and as a snack in between your meals, you will meet the daily recommendation easily! Not only does it provide you with a good dose of vitamins and minerals to keep your body healthy but they can reduce the risk of some types of cancer and lower your risk for heart disease.
Eating fruit in my household is no problem! DS5 would eat 4+ apples a day if I left him. It is usually the first thing he turns to when he is hungry. Vegetables, on the other hand, are like punishment in my house! Finding unique and interesting ways to incorporate vegetables into our diet is a challenge!
This week’s food Friday is Greek salad. Its quick and easy to prepare and provides tons vegetables to help meet your quota!
- 1 Cucumber
- 1 Red onion
- 1 Tomatoes
- 1 Cup of crumbled Feta
- 1/2 cup of Greek Dressing ( or olive oil, vinegar and greek seasonings)
- CHOP your vegetables into bite sized pieces.
- Mix them together with the dressing.
- EAT your nutritious salad
