As summer kicks into high gear, cooking moves from a solitary family meal to a community adventure. Pool parties, backyard BBQ and impromptu get together’s are they way to go. When my family is invited to party, we love to contribute to the celebration with a delicious appetizer or dessert. This past weekend, we attended Canada Day celebrations in Ottawa. Sadly, our main plans were rained out, but instead of cancelling the party we created an amazing spread of cheeses, deli meats and crackers!
DH had an amazing idea for way to contribute to this feast: Bacon Spinach Cheese Dip! Melted, bubbly cheese infused with spinach, bacon and cream cheese, what could be better? When one of these hot dips make an appearance, they are devoured by hungry friends and family almost immediately. From young to old, double fisting with tortilla chips is a must with this cheesy delicious snack.
Bacon Spinach Cheese Chip Dip
8 oz of cream cheese, softened to room temperature
1/3 cup of mayonnaise
1/3 cup of sour cream
1 tsp of garlic powder
1 tsp of paprika
16 oz of spinach fresh or frozen
10 slices of bacon cut up into bit size pieces
1 cup of grated Parmesan cheese
1 cup of marble cheese
1 bag of tortilla chips
1.. Prepare ingredients; Thaw spinach, cook bacon and set cream cheese at room temperature.
2.. Preheat oven to 350 F.
3.. Mix the cream cheese, mayonnaise, and sour cream in a bowl until well combined. Then add in spices (paprika and garlic).
4.. Stir in the bacon bits, spinach and Parmesan cheese.
5.. Transfer to a microwave safe bowl and top with marble cheese.
6.. Bake in oven until golden and bubbly (approx 25 mins).
7.. Serve with tortilla chips
